I think Gilgameshs actions are more based on his own personality (and the flaws therein) than anything so clichéd as the Tainted Holy Grail infecting and corrupting him. Gilgamesh is, to put it bluntly, what happens to a man when he grows up having everything he ever wanted handed to him without anyone around to teach him the meaning of the word No. He has an ego of monolithic proportions, knows that hes almost a God and revels in it, and loves himself to such a degree that being a selfish bastard of a person who always needs to get his way no matter what is not just who he is, but a way of life. Hes also a horrible narcissist, arrogant in the extreme, and thinks that everyone and anyone that isnt equal to him on some level be it looks, skill, station, or anything else as superficial is, to put it simply, a Mongrel piece of trash not worth his time. Unfortunately, this mindset also leads Gilgamesh to severely underestimate his opponents most of the time, and makes him act as your clichéd rich and all-powerful antagonist would usually act in a fight, as he loves to taunt his opponents and go on and on about how all-powerful he is. At times, he will even give people a chance to escape and let his guard down simply because he thinks hes beaten them sufficiently.
Saying all of this that, however, doesnt cover all of what Gilgamesh truly is. Like every other Epic Hero who came after him, Gilgamesh is, at his base, a mortal man -- with mortal wants, needs, and flaws -- who was given the chance to be Great. In his own time period, he has no equals, rules over the most prosperous Kingdom in the history of the known world, and becomes so bored with having everything life can offer simply given to him that he becomes a cruel, chauvinistic tyrant. He reigns over his people with an iron fist, and, much as he is in most of the Scenarios of Fate/Stay Night, shows that he doesnt care about anyone but himself until someone (Enkindu) comes along and beats some common sense into him. From here, the God King finds himself slowly but surely changing to be a better person, and though he still primarily acts like an arrogant jerk, hes at least tolerable, and treats people fairly. The Canon of the series also shows that Gilgamesh can be different from his given Tyrant persona if given the right motivation which, tragically, is either death or separation from the Grail Wars themselves and that he can, at the very least, be a genuinely decent human being; but most of the time? Gilgamesh can be summed up in the following sentence: I am God; I am your King; Worship Me, and do as I want.
[edit] Powers and Abilities
Gilgamesh is an Archer-Class Noble Phantasm (IE: Summoned being) with a variety of abilities. He can summon weapons by using a "spatial key" that connects him to the "Gate of Babylon", which gives him access to every single mythological weapon/item known throughout mankind's history, is strong enough to cleave a single person in two, and, well...the list goes on and on. He's the main antagonist of the series, and is pretty much subsequently able to do almost everything and anything called of him.
[edit] History
Gilgamesh's human life is completely based off of the mythological tale: "The Epic of Gilgamesh.", where he is known as the titular character "Gilgamesh, the King of Kings." After his death, he became the first Noble Phantasm of his world, and participated in the various Holy Grail Wars* throughout history.
- Wars between Sorcerers and their Servants, the Noble Phantams they summon to do their bidding.
