I'd say go with alphabetical order for now, as it will make it easier for anyone looking for a specific fish's information. I can see the need for in-order listing, as it'll help people find which fish they're missing, but I think that can go on a seperate page, or something else. We'll work it out later. When editing the page of any fish, end it with:

[Category:Fish] (but with an extra square bracket each side)
