Paisa (pl. Paisas) A person from the “Paisa region” in Colombia, South America. The region is formed by the Colombian departamentos of Antioquia, Caldas, Risaralda and Quindío. The main economic activities are coffee growing, cattle raising, flower growing and gold mining. The main cities are Medellín, Pereira, Manizales, Armenia, Envigado, Rionegro and Caucasia. Paisas have their own cultural identities linked to the most mountainous region of South America. Their ancestors are primarily the conquerors from Extremadura, Spain (16th century), Andalucía, Spain (17th century) and the indigenous Katíos and Tahamíes.
A typical dish of the region, aptly named la bandeja paisa (the paisa dish), is generally comprised of sausage, fried pork grind, rice, beans, avocado, sweet fried plantain and fried eggs. It is a very popular dish in Colombian restaurants in the United States.
