A laboratory is required to research new technologies. These technologies are required to construct (or unlock) certain troops or your ship.
Researching spear will allow you to produce spearmen (if you have a barracks capable of constructing spearmen).
Researching bow will allow you to produce archers (if you have a barracks capable of constructing archers).
Researching sail will allow you to produce ships (if you have a harbor capable of constructing ships).
