Jennifer Majewski's Barley Bake

Ingredients

• 5 Tbsp. butter
• 1 large onion, chopped
• 3/4 lb. mushrooms
• 3/4 c. barley
• 1/2 tsp. salt
• 1/4 tsp. pepper
• 2 c. chicken/beef broth

Directions

Preheat oven to 350 degrees. Melt butter in skillet. Add onions and cook for 3 minutes. Add mushrooms and barley; cook for 4 minutes, stirring occasionally. Add remaining ingredients. Cook to a boil. Pour into 1 1/2 quart casserole dish. Bake for 35 minutes.
