From the game Super Mario Sunshine for the Nintendo Gamecube

Go into any episode with a secret in it that you have already beaten. Go to that secret area and hit the red coin button. You can collect the coins if you want, but it doesn't matter, just make sure you don't get all eight. Make your way to the Shine Sprite and wait for the timer to get down to 10 seconds (which is when it begins to tick). Now collect the Shine Sprite. The timer will continue to tick until you leave the level.
