Jennifer Majewski's Potato Salad

Ingredients

  • 5-6 medium white potatoes
  • 5 large eggs
  • 1 large onion
  • 3 or 4 long celery sticks
  • 1 pt. Hellmann's mayonnaise
  • Celery seed
  • Salt to taste

Directions

Boil potatoes until done (15 to 20 minutes). Boil eggs until hard-boiled. Let potatoes and eggs cool. May refrigerate both potatoes and eggs if prepared the day before. Peel eggs and potatoes. Cut into small cubes the potatoes, eggs, and celery. With a wooden spoon, spread enough mayonnaise in a bowl to coat bottom and sides. Layer potatoes, eggs, celery, and remaining mayonnaise in alternating layers. Mix the salad and sprinkle the top of the salad with celery seed and salt.
