Intervals - In music theory there are certain intervals, like the third and the sixth, that resound with each other in a pleasing fashion and so are considered optimal for purposes of composition. Maybe predicate the magic upon this type of theory?
Dissonance/Weak Progressions - Certain combinations can cause unpleasant noise but others which might be odd together can produce unexpectedly interesting results, often in a positive fashion.
Diablo En Musica - The tritone (three whole-step interval), simply put. Western cultures in the past had a taboo upon this that wasn't actually broken until the late nineteenth century. Do you have anything like this in your setting, maybe certain combinations to be avoided at all costs?
