Pita Pizzas

This is a simple recipe that allows your guests to create their dinner using their favorite ingredients.


Pita bread sliced in half (through the pocket)--usually one per guest, or for light eaters or large pitas one per two guests

1 can tomato sauce

1 cup each of assorted vegetables (ie: mushrooms, spinach, tomatoes, peppers, onions, olives, etc.)

3 cups mozzarella cheese

1/2 cup-1 cup other desired cheeses (ie: blue, Gorgonzola, Feta, Cheddar, etc.)


Preheat the oven to 350F. Lay out all the ingredients and let your guest build their own pizzas. Start with half the pita, spread a thin layer of tomato sauce over it (or for white pizza spread garlic butter). Add whatever vegetables and cheeses desired. Bake about 15 minutes or until the cheese begins to brown.

An interesting and delicious idea is to microwave a potato until soft, cut into thin slices, spread on pizza with onions, broccoli, and cheddar cheese and bake. Baked potato pizza!
