There are a lot of companies in Germany which produce certain products which contain the ingredient E471 also known as "Mono- und Diglyceride von Speisefettsäuren". This ingredient can either come from an animal source or a plant source. Therefore it is doubtful. There are also other ingredients which are doubtful. One solution to removing this doubt is to directly ask the company whether this ingredient in their product comes from animal or plant source. thank you for your large interest in our products. We are pleased over each positive reaction of our customers, because this confirms us in the effort around quality and taste of our cakes.
In principle we do not add any animal origin to our products. So also the greases, which we use, are vegetable origin. Only milk fats, in the form of for example quark, are inevitably animal origin.

Sehr geehrter Herr Kahn,
herzlichen Dank für Ihre Anfrage und Ihr Interesse an unseren Produkten. Gerne geben wir Ihnen Auskunft über die Zutaten der Nestlé Schöller Produkte.
Bereits seit 1998 verwenden wir für die Herstellung unserer Speiseeis-Produkte ausschließlich Mono- und Diglyceride von Speisefettsäuren pflanzlicher Herkunft. Mono- und Diglyceride werden im Speiseeis als Emulgator eingesetzt. Durch die Verwendung dieser Emulgatoren wird eine bessere Luftverteilung im Eis erreicht und die Cremigkeit der Produkte verbessert.
Emulgatoren aus Mono- und Diglyceriden von Speisefettsäuren kommen in kleinen Mengen in natürlichen Fetten/Ölen vor. Hergestellt durch Umesterung von Speisefetten mit Glycerin oder durch direkte Veresterung von Fettsäuren mit Glycerin. Je nach Einsatzmenge resultieren verschiedene Typen von Mono-Diglyceriden mit einem Monoglyceridgehalt von 35-60%. Die Monoglyceride können durch Molekulardestillation aus dem Gemisch in 90-95% Reinheit abgetrennt werden. Die Wirksamkeit hängt im wesentlichen vom Verhältnis der Mono- zu den Diglyceriden ab.
Bei Farbstoffen wird lediglich E120 (Cochenille, Karminsäure) aus tierischen Bestandteilen hergestellt (enthält keine Bestandteile von Rind oder Schwein), alle anderen für Lebensmittel zugelassenen Farbstoffe werden aus pflanzlichen Rohstoffen oder synthetisch hergestellt.
